Haggis Recipe:
This simplified haggis recipe blends tender ground lamb, rich chicken livers, and creamy oatmeal with a fragrant bouquet of warming spices like nutmeg, pepper, and coriander, creating a savoury and satisfying traditional taste of Scotland.
Ingredients:
250g ground lamb, 10g chicken livers, 1 onion finely chopped, 125g beef or chicken stock, 150g pinhead oatmeal, 4g ground black pepper, 2g ground coriander, 1g nutmeg, 1g allspice, 1g cinnamon, 8g tablespoon butter. For alittle more complex flavour add 1g cayenne pepper, 1g ground cloves and 1g mace.
Instructions:
Serve hot with mashed potatoes (neeps) and mashed turnips (tatties).

- Stir in oatmeal: Stir in the pinhead oatmeal and cook for 5 minutes, or until the oatmeal is thickened.
- Transfer to baking dish: Transfer the mixture to a baking dish.
- Bake: Cover and bake in a preheated oven at 175°C for 30 minutes. Uncover and bake for an additional 10 minutes.
Serve hot with mashed potatoes (neeps) and mashed turnips (tatties).
